SPINACH PULAO BY VIJJI

Ingredients:

  • 1 1/2 cup rice
  • 1 bunch spinach
  • 1 medium onion
  • 5 green chillies
  • 1 one inch cinnamon
  • 4 cloves(lavangam)
  • cilantro                                 
  • mint leaves (4 or 5)
  • oil
  • salt

Method:
  1. Pressure cook or microwave the spinach with a pinch of salt until it becomes tender and soft.
  2. Let it cool down and make a paste with it, keep it aside.
  3. Take sufficient quantity of  oil in a skillet on medium flame , add cloves and cinnamon.
  4. To this add sliced onions and chilies, fry.
  5. Add ginger garlic paste, mint and cilantro and cook for a min.
  6. Add the spinach paste to the above base and saute it for 2 min.
  7. Transfer the whole ingredients to the rice cooker and add 3 cups water.
  8. Wash rice and keep aside.
  9. Add salt and when water starts boiling rapidly add the rice. Cook until it is done.
Garnish with extra cilantro and serve hot. You can serve this dish along with yoghurt sauce.
